It had been quite a while since the last time I was sick, and then it struck me twice in one month. Yuck! I'm feeling much better today than yesterday, so today was filled with lots and lots of catch up, crying babies, and super fast meals.

I like to add a meatless meal one or two times a week because it just seems good for us. Today we're having this:

I think its super flavorful, very quick and easy (if you're willing to improvise), and its really fun that I can say I've actually made something with jicama!

The recipe can be found at Pinch My Salt. I've tried multiple meatless entrees from here, and we've loved them all so far. This particular recipe calls for grilled corn, but I wanted something faster than that so I used canned. Its delicious. I'm sure grilling the corn adds great flavor and I will definitely try it some day, but its also good to know its tasty the fast way too!

  2. YUM . . . Looks tasty! I like to have "meatless" meals weekly too. But I can usually only get away with it one time a week . . . since my growing boys are hungry ALL THE TIME (they like meat). But I agree with you that it seems healthier, and I prefer it. Sorry you havn't been feeling well. I'm glad you're on the up and up!! Love you!
